COVID-19 Survival Tips: Easy Meal Prep

CHOPPED: challenge make an edible breakfast out of mostly leftover meats. Added the usual ginger, onions & spinach (all previously frozen by moi) sautéed then fried them up with leftover rice, two scrambled eggs. The meat was actually good as I cut it into small pieces to minimize chewing. Having fresh papaya from our backyard sure does help. The potatoes crisped up nicely. Mom didn’t chop me.

Chopped Episode: use expired frozen items from your freezer mixed with freshly grown green onions, freshly frozen chopped yellow onions, freshly ground & frozen ginger, red wine from one of our many guests, shoyu, a fab of oyster sauce & honey. Marinated the chicken wings in shoyu, red wine, garlic sautéed for 10 min and then broiled for 5. Fried rice started with browning some yellow onions, ginger, salt then added lop Jung & freshly frozen green beans, then added rice to get the flavor thoroughly mixed in the olive oil. Let’s say, they didn’t chop me.

5 stars for this tender flavorful pork loin made with fresh rosemary, 4 fresh garlic cloves minced with olive oil & white wine vinegar squished into slits and spread on the outside & baked at 350 until 145 degrees. Super cheap meal. This little cut fed 3 adults with 2 pieces for lunch tomorrow.

Chopped Episode: Tuna melt with red onion, celery Kamauela tomato, topped with cheddar cheese, served with Greek olives and dill pickle and a nice tall glass of milk.

Chopped: Pasta Primavera improvised. Spinach, asparagus, onions, mushrooms, mini bell peppers sautéed in olive oil, fresh garlic, and salt. I didn’t get chopped. The judges said, Delicious but next time add Italian sausage.

Roasted fresh garlic atop fresh Kamuela tomatoes, sourdough bread, dill pickles, and a clementine. Grilled cheese needed ham or tuna next time.

Yum. Simple but delicious ham sandwich, sourdough bread, tomato, romaine lettuce, Hickory Farms mustard from a Christmas present, black olives and a dill pickle.

Chopped: Chicken Salad Sandwich
– Ok cucumber ended up in salad for tonight’s dinner and not the Costco rotisserie chicken mixed with red onion, celery, dill & mayo assembled with store-bought sourdough (disappointing), romaine lettuce (we used to be afraid of romaine not that long ago but now it’s our friend) and Kamuela tomatoes.

Surprisingly ono as the creamy texture of the perfectly ripe avocado complimented the leftover salmon on leftover toasted croissants (Pilsbury not homemade Lydia Lin). We eat our avocado with soy sauce. This breakfast at a resort could have cost $27-35 a person (but we wouldn’t tell them the leftover part).

Tonight’s dinner fresh Atlantic salmon fillet, skin on. To prep this filet, I needed to remove a handful of bones which are easy to find although not that easy to extract. Need a clamp to get a good grip on the slippery bones. Mixed mayo, lemon juice, and grated ginger into a paste and covered both sides of the filet. Add salt. I forgot to cut slits in fillet to put some of the mayo spread into the fish but it still tasted good. Baked at 325 until 115 degrees. We like our salmon on the medium rare side. It’s a weekly favorite. Paul buys the fillet at the commissary.

This delicious homemade chicken soup was made in about 15 minutes with a Costco rotisserie chicken, Portuguese sausage, kidney beans, spinach, onions, celery, carrots, potatoes, coconut milk, Montreal steak seasoning & Tabasco. Simmered for 30 minutes and it was inexpensive. It could have fed 15-20 people.

Chopped: Guacamole -beautifully ripened California avocado mixed with unevenly diced non-vine ripened tomato, dried cilantro & dried parsley with inconsistent mutilated red onion. Stay tuned to see if I’m chopped.

NY Strip with a Montreal Steak seasoning rub cooked sous vide to 139 degrees then seared to med rare. We usually like it a little bit rarer but getting the hang of cooking steak this way. I can grill a steak to perfection but this is new to me. Paul recommended I post this dinner as he and Mom said: “You won’t be chopped for this dinner!” Asparagus sautéed with onions, butter, olive oil, and garlic. Steamed potatoes for 15 minutes mixed with butter and parsley.

Open-faced ham & spinach sandwich with fresh papaya and a total fail soft boiled egg. Having devoured this delightful breakfast, the soft boiled egg may have looked like a fail, but it was the perfect finish for this yummy start to our day. Mom says, “Delicious!”

Sustenance for an already busy morning. Homemade sourdough English muffin fried up in bacon grease straight from the freezer (didn’t rise but delicious), goat cheese omelet with the kitchen sink and bacon baked by the pound in the toaster oven (makes it quick and easy to reheat). Ok, we didn’t raise the chicken but we grew the green beans and the cornbread is homemade with applesauce and I cooked the chicken in the AirFryer. I used tempura flour instead of AP flour, egg whites, and panko bread crumbs mixed with Montreal Steak Seasoning for a home run!

Late breakfast after my workout, usual one egg omelette, homemade yogurt with a dab of real maple syrup and strawberries, sausage, and a new addition freshly made cranberry banana bread using dried cranberries (had to find a use for the Costco sized bag). Now ready to work, 3 active rental listings ready for a qualified tenant, 2 more upcoming rentals properties, prepping marketing materials for an upcoming listing. Hope to squeeze in a sourdough bread, cornbread, and something for dinner.

Comfort food, Chinese jook (mainly because I’m Chinese). Started with a Costco rotisserie chicken boiled down for the broth, then added cooked rice, ginger, celery, shiitake mushrooms, topped with sesame oil, Montreal Steak Seasoning & homegrown green onion. I made enough for a week. Oh yeah, fresh ground coffee.

Hard to believe that’s a one egg omelette! What makes it look so big it’s filled with spinach, mushrooms, onions and Canadian bacon seasoned with liquid smoke and a little salt. Almost forgot to mention some pepper jack cheese.

Late lunch. Pastrami on homemade bread with chipotle mayo, romaine lettuce, Kamuela tomato, red onion served with homemade potato chips & baby dill pickles.

Chopped: Seafood Medley – used an ATK recipe to put this onolicious gnocchi, mussels, shrimp & clams together with a broth of 15 cloves of garlic, 1/4 cup olive oil, 1/2c white wine, 1/2 c parsley, 2 fresh tomatoes, 1 T tomato paste, 1 tsp thyme, salt, red pepper flakes & 4 anchovies served with a side of corn bread because I needed to use it up. Mom said “Excellent”, Paul said, “I’d order that in a restaurant!”
